- Preheat oven to 350°F (175°C). Lightly grease a large baking dish or cast iron skillet.
- Combine shredded cheeses in a large bowl and set aside.
- Cook the pasta one minute shy of al dente, drain, toss with olive oil, and set aside.
- Melt butter in a deep saucepan or Dutch oven. Whisk in flour over medium heat for about 1 minute until bubbly and golden.
- Gradually whisk in milk and heavy cream until smooth. Cook and whisk until bubbling, then continue for 2 more minutes. Season with salt and pepper.
- Add two cups of shredded cheese and whisk until smooth. Add another two cups of shredded cheese and whisk until creamy and thick.
- Stir in the cooled pasta until fully coated.
- Pour half of the mac and cheese into the pan, top with remaining shredded cheese, and add the rest of the mac and cheese.
- In a small bowl, combine panko crumbs, Parmesan cheese, melted butter, and paprika. Sprinkle over the top.
- Bake until bubbly and golden brown, about 30 minutes. Serve immediately.
