Sweet and Tangy Family Pimiento Cheese

A classic, crowd-pleasing Southern pimiento cheese made with freshly grated yellow American cheese, tangy Miracle Whip, and a touch of sweetness.

Ingredients
  

  • 1 lb yellow American cheese thick deli block, freshly grated
  • 1 cup Miracle Whip
  • 2 tbsp granulated sugar
  • 1 jar 4 oz diced pimientos (thoroughly drained)

Method
 

  1. Ask your local deli counter to slice 1 pound of yellow American cheese as thick as possible (usually 1 or 2 large blocks).
  2. Grate the cold American cheese using the large holes of a box grater and place it into a large mixing bowl.
  3. Drain the diced pimientos in a fine-mesh strainer, pressing gently to remove all excess liquid.
  4. Add the drained pimientos, Miracle Whip, and sugar to the bowl with the grated cheese.
  5. Mix everything together with a large spoon or spatula until completely combined.
  6. Taste the mixture and fold in a little more Miracle Whip or sugar if desired.
  7. Transfer to an airtight container and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

Cheese Sourcing: Do not use pre-shredded cheese. The deli trick is essential for the correct texture.
Serving Suggestions: Serve cold with butter crackers, or melt it between two slices of bread for an incredible grilled cheese sandwich.
