Old-Fashioned Stained Glass Window Candy

A nostalgic no-bake Christmas candy made with chocolate, colorful mini marshmallows, butter, and shredded coconut. Also known as Church Window Cookies or Cathedral Window Candy.

Ingredients

  • 2 cups 12 ounces / 340 g semisweet chocolate chips
  • ½ cup 113 g unsalted butter
  • 1 teaspoon vanilla extract
  • 1 bag 10 ounces / 283 g pastel-colored mini marshmallows
  • 1 cup sweetened shredded coconut divided

Method

  1. Lay two sheets of wax paper or parchment paper on the counter, each approximately 16 inches long.
  2. Sprinkle ½ cup shredded coconut down the center of each sheet.
  3. Place the chocolate chips and butter in a microwave-safe bowl.
  4. Microwave at 50% power in 20-second intervals, stirring between intervals until smooth.
  5. Stir in the vanilla extract.
  6. Allow the chocolate mixture to cool for approximately 10–15 minutes, until no longer hot.
  7. Place the pastel mini marshmallows in a large bowl.
  8. Pour the cooled chocolate mixture over the marshmallows and gently fold until evenly coated.
  9. Divide the mixture into two equal portions and spoon onto the prepared coconut-covered sheets.
  10. Shape each portion into a log approximately 2 inches thick.
  11. Roll the logs through the coconut and wrap tightly in wax paper.
  12. Refrigerate for at least 3 hours or overnight until firm.
  13. Unwrap and slice into approximately ½-inch rounds.
  14. Arrange on a serving plate and keep chilled until ready to serve.

Coconut may be omitted if preferred.
Refrigerate overnight for cleaner slices.
Store in an airtight container in the refrigerator for up to 1 week.
