Old-Fashioned Crispy Anise Pizzelle Cookies

Thin, crisp Italian-American pizzelle cookies made with eggs, butter, flour, and traditional anise flavoring. Perfect for Christmas cookie tins and homemade holiday gifts.

Ingredients

  • 2 large eggs
  • ½ cup 100 g granulated sugar
  • ⅓ cup 76 g unsalted butter, melted and cooled
  • 1 cup 125 g all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon anise extract
  • ½ teaspoon anise seeds optional

Method

  1. Preheat the pizzelle iron according to the manufacturer's instructions.
  2. In a mixing bowl, beat the eggs and sugar until smooth and slightly thickened.
  3. Add the melted, cooled butter, anise extract, and optional anise seeds.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually mix the dry ingredients into the wet ingredients until a thick batter forms.
  6. Place a small spoonful of batter in the center of each pizzelle pattern.
  7. Close the iron and cook according to its instructions until lightly golden, approximately 30 seconds to 2 minutes.
  8. Carefully remove the pizzelles and place them flat on a wire rack.
  9. Allow them to cool completely without stacking.
  10. Serve plain or with a light dusting of powdered sugar.

Notes

This is a suggested small-batch alternative, not the exact handwritten recipe, and has not been kitchen-tested here.
Use a fully preheated pizzelle iron.
Avoid overfilling the plates.
Let each cookie cool completely on a wire rack.
Store in an airtight container for up to one week.
If the cookies soften, briefly warm them in a 300°F oven for 3–5 minutes and cool again.
