Easy Skillet Focaccia for One

Small-batch homemade focaccia with a crispy golden crust, fluffy center, fresh rosemary, and olive oil. Perfect for one person.

Ingredients

  • 1 cup 125 g all-purpose or bread flour
  • ½ teaspoon instant yeast
  • ½ teaspoon salt
  • ⅓ cup 80 ml warm water
  • 2 –3 tablespoons olive oil divided
  • Fresh rosemary
  • Flaky sea salt

Method

  1. Combine flour, yeast, salt, warm water, and 1 tablespoon olive oil.
  2. Mix into a sticky dough and cover.
  3. Let rise for 1–2 hours until puffy.
  4. Oil a 6–8-inch cast iron skillet and transfer the dough into it.
  5. Stretch gently and let rise another 30–45 minutes.
  6. Preheat oven to 450°F (230°C).
  7. Press dimples into the dough using oiled fingers.
  8. Drizzle with remaining olive oil, rosemary, and flaky salt.
  9. Bake for 18–22 minutes until golden brown.
  10. Cool briefly before slicing and serving.

Notes

Use plenty of olive oil for crispy edges. Keep the dough soft and sticky, and allow it to rise properly.
