Ingredients

  • 2 boxes refrigerated pie crusts 4 crusts total
  • 3 large apples peeled and finely diced
  • ⅓ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter
  • 1 large egg beaten

Method

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.

  3. Add apples, brown sugar, and cinnamon. Cook for 5–7 minutes until softened.
  4. Remove from heat and cool the filling.
  5. Cut 12 circles from two pie crusts using a 3½-inch round cutter, rerolling scraps as needed.
  6. Press dough circles into muffin cups.
  7. Divide cooled apple filling evenly among the pastry shells.
  8. Cut remaining pie crusts into thin strips.
  9. Arrange strips into lattice patterns over the pies and seal the edges.
  10. Brush the pastry with beaten egg.
  11. Bake for 18–20 minutes, until golden and bubbling.
  12. Cool for 10–15 minutes before carefully removing from the muffin tin.

Notes

Use firm apples, cool the filling before assembling, and keep the pie dough chilled for easier handling. Baking times may vary depending on the oven and crust thickness.
