Easy Homemade Southern Pecan Pralines

Rich, buttery homemade pecan pralines made with brown sugar, cream, butter, and fresh pecans. A traditional Southern candy with a creamy, slightly crumbly texture.

Ingredients

  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 1/2 cup heavy whipping cream
  • 4 tablespoons unsalted butter
  • 2 cups pecan halves
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method

  1. Line two baking sheets with parchment paper.
  2. Combine brown sugar, granulated sugar, heavy cream, butter, and salt in a heavy-bottomed saucepan.
  3. Heat over medium heat, stirring until the butter melts and the sugar dissolves.
  4. Bring to a boil and cook until a candy thermometer reads 235–240°F.
  5. Remove from heat and add the pecans and vanilla.
  6. Stir for 1–3 minutes until the mixture begins to thicken and lose its shine.
  7. Quickly drop spoonfuls onto prepared baking sheets.
  8. Let stand for approximately 30 minutes until firm.

Notes

Use fresh pecans, watch the candy temperature carefully, and work quickly after removing the mixture from the heat.
