Easy Creamy Vanilla Rice Pudding

A brilliant 15-minute shortcut recipe for creamy, comforting rice pudding using instant rice and cook-and-serve vanilla pudding mix.

Ingredients
  

  • 4 cups whole milk
  • 1 large egg
  • 1 pkg 4.6 oz Jell-O Vanilla Cook & Serve Pudding
  • 1 cup uncooked instant white rice e.g., Minute Rice
  • 1/4 cup raisins optional
  • 1/4 tsp ground cinnamon plus extra for garnish
  • 1/8 tsp ground nutmeg plus extra for garnish

Method
 

  1. n a large saucepan (off the heat), crack the egg and pour in the milk. Whisk vigorously until fully blended.
  2. Add the dry pudding mix to the saucepan. Whisk continuously for 2 minutes until the powder is fully dissolved and smooth.
  3. Use a spoon to stir in the uncooked instant white rice and the raisins.
  4. Place the saucepan on the stove over medium heat. Bring the mixture to a boil, stirring constantly to prevent the bottom from scorching.
  5. Once it reaches a boil and thickens, remove the pan from the heat immediately.
  6. Let the pudding cool in the pan for 5 minutes, stirring occasionally.
  7. Pour the warm pudding into dessert dishes or a serving bowl.
  8. Sprinkle the tops with the ground cinnamon and nutmeg. Serve warm, or chill in the refrigerator to serve cold.

Notes

Pudding Mix Warning: You MUST use "Cook & Serve" pudding mix. Instant pudding mix will not work for this recipe.
Skin Prevention: To stop a skin from forming while cooling in the fridge, press a layer of plastic wrap directly onto the surface of the pudding.
