- n a large saucepan (off the heat), crack the egg and pour in the milk. Whisk vigorously until fully blended.
- Add the dry pudding mix to the saucepan. Whisk continuously for 2 minutes until the powder is fully dissolved and smooth.
- Use a spoon to stir in the uncooked instant white rice and the raisins.
- Place the saucepan on the stove over medium heat. Bring the mixture to a boil, stirring constantly to prevent the bottom from scorching.
- Once it reaches a boil and thickens, remove the pan from the heat immediately.
- Let the pudding cool in the pan for 5 minutes, stirring occasionally.
- Pour the warm pudding into dessert dishes or a serving bowl.
- Sprinkle the tops with the ground cinnamon and nutmeg. Serve warm, or chill in the refrigerator to serve cold.
Notes
Pudding Mix Warning: You MUST use "Cook & Serve" pudding mix. Instant pudding mix will not work for this recipe.
Skin Prevention: To stop a skin from forming while cooling in the fridge, press a layer of plastic wrap directly onto the surface of the pudding.
