Crispy Cast-Iron Baked Potatoes

Easy cast-iron baked potatoes with crispy, seasoned skins and soft, fluffy centers. Made with just four simple ingredients.

Ingredients

  • 4 medium russet potatoes washed and dried
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Optional: garlic powder smoked paprika, or dried herbs

Method

  1. Preheat the oven to 425°F.
  2. Scrub the potatoes, dry them thoroughly, and prick each one a few times with a fork.
  3. Rub the potatoes with olive oil and season with salt and pepper.
  4. Arrange them in a cast-iron skillet with a little space between each potato.
  5. Bake uncovered for 45–60 minutes, turning halfway through.
  6. Check that a fork slides easily into the center.
  7. Let rest for 5 minutes, then slice, fluff, and serve with your favorite toppings.

Notes

Notes: Choose similarly sized potatoes for even cooking. Do not wrap in foil if you want crispy skins.
