Classic Waldorf Chicken Salad

A delicious, traditional Waldorf chicken salad featuring chunk chicken, unpeeled Granny Smith apples, grapes, raisins, walnuts, and a creamy lemon-mayo dressing.

Ingredients
  

  • 3 cans 12.5 oz each Kirkland Signature Premium Chunk Chicken Breast (drained) or cooked chicken breast (chopped/shredded)
  • 1 large Granny Smith apple unpeeled and chopped
  • 2 cups mayonnaise plus more based on appearance
  • 1 cup celery chopped and thinly sliced
  • 1 cup raisins
  • 1 ¼ cups green or red grapes quartered
  • 1 ¼ cups walnuts lightly chopped
  • 3 tsp fresh lemon juice
  • ½ tsp sea salt plus more to taste
  • ¼ tsp black pepper plus more to taste

  • Large mixing bowl
  • Whisk
  • Cutting board and chef's knife
  • Measuring cups and spoons

Method
 

  1. Make Dressing: In a large bowl, whisk together the mayonnaise and fresh lemon juice until smooth.
  2. Add Fruit & Nuts: Stir in the chopped unpeeled apple, quartered grapes, sliced celery, and chopped walnuts.
  3. Add Chicken & Seasonings: Fold in the drained chunk chicken breast and raisins. Season with sea salt and black pepper to taste.
  4. Chill: Cover the bowl tightly with plastic wrap and refrigerate for 2 hours before serving.

Notes

Mayonnaise: Feel free to add a little extra mayonnaise if you prefer a creamier, wetter chicken salad consistency.
Apples: Granny Smith apples provide the best tart crunch, but Honeycrisp or Fuji apples also work wonderfully.
