Classic Southern Creamy Kidney Bean Salad

A nostalgic, vintage potluck side dish made with dark red kidney beans, diced hard-boiled eggs, onions, and a rich, tangy mayonnaise dressing.

Ingredients
  

  • 2 cans 15 oz each dark red kidney beans (drained and rinsed)
  • 3 large eggs hard-boiled, peeled, and diced
  • ¼ cup white or yellow onion finely diced
  • ¾ cup mayonnaise
  • 1 tbsp granulated sugar
  • 1 tbsp apple cider vinegar
  • ½ tsp salt
  • ¼ tsp black pepper

  • Fine-mesh colander
  • Large mixing bowl
  • Whisk
  • Cutting board and knife

Method
 

  1. Drain & Rinse: Pour the kidney beans into a colander, rinse thoroughly under cold water, and shake dry.
  2. Make Dressing: In a large bowl, whisk together the mayonnaise, sugar, vinegar, salt, and black pepper until smooth.
  3. Prep Add-Ins: Chop the hard-boiled eggs and dice the onion.
  4. Combine: Add the rinsed kidney beans, chopped eggs, and diced onions to the dressing. Fold gently until everything is evenly coated.
  5. Chill: Cover tightly with plastic wrap and refrigerate for at least 2 hours (overnight is best) before serving cold.

Notes

Make-Ahead: Making this the day before serving allows the kidney beans to absorb the creamy dressing flavors fully.
Customization: Feel free to add small cubes of cheddar cheese if your family recipe traditionally includes cheese!
