Cast Iron Tater Tot Hotdish

A gourmet twist on the classic Midwestern casserole, featuring ground beef, Italian sausage, smoked Gouda, truffle salt, and a crispy tater tot crust.

Ingredients
  

  • 1 medium yellow onion diced
  • 1 lb ground beef
  • 1/2 lb hot Italian sausage
  • 2 tsp Worcestershire sauce
  • Truffle salt black pepper, garlic powder, onion powder, and thyme (to taste)
  • 2 cups frozen cut green beans
  • 1.5 cups frozen corn kernels
  • Two 10oz cans condensed cream of mushroom soup
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese divided
  • 1 cup smoked Gouda cheese divided
  • 1 bag frozen tater tots
  • Fresh parsley grated parmesan, and Maldon sea salt (for garnish)
  • Hot sauce for serving

  • Large mixing bowl
  • Wooden spoon

Method
 

  1. Cook onions in a cast-iron skillet over medium heat until translucent. Add ground beef and Italian sausage; cook until browned.
  2. Stir in Worcestershire sauce and seasonings. Drain excess grease if necessary.
  3. In a large bowl, mix the meat mixture, sour cream, cream of mushroom soup, green beans, corn, 1/2 cup smoked Gouda, and 1/2 cup sharp cheddar.
  4. Spread the filling back into the skillet. Sprinkle with the remaining Gouda and cheddar cheese.
  5. Place frozen tater tots evenly across the top in a tight layer.
  6. Bake at 350°F (175°C) for 50-60 minutes until bubbling and tots are deeply browned.
  7. Garnish with parmesan, parsley, and Maldon sea salt. Serve hot with hot sauce.
