Cast Iron Sausage, Potatoes, and Onions

: A quick, 35-minute one-pan skillet meal featuring jalapeno smoked beef sausage, tender Yukon gold potatoes, and sweet yellow onions.

Ingredients
  

  • 1 jalapeno smoked beef sausage link sliced into rounds
  • Yukon gold potatoes diced
  • 1 yellow onion sliced or diced
  • Olive oil
  • Salt and black pepper to taste

Equipment

  • Cast-iron skillet
  • Lid for skillet
  • Spatula

Method
 

  1. Brown the sliced sausage in a cast-iron skillet with a little olive oil to render the fat. Remove the sausage and set aside.
  2. Add diced potatoes to the sausage-flavored oil in the pan, season with salt, and cover to cook until nearly tender.
  3. Push potatoes to the sides, add a little oil to the center, and cook the onions until translucent.
  4. Return the sausage to the pan, toss everything together to combine, and remove from heat. Serve immediately!
