- Preheat oven to 375°F (190°C). Season chicken thighs with salt, pepper, and herbs.
- Heat oil in a large cast-iron skillet over medium-high heat. Sear chicken skin-side down until golden brown. Remove and set aside.
- Add onion and garlic to the skillet, cooking until soft. Stir in uncooked rice and peas.
- Pour in chicken broth. Nestle the seared chicken thighs on top and arrange fresh lemon slices throughout the pan.
- Bake in the oven for 35-40 minutes until rice is tender and chicken is cooked through.
- Let cool slightly, scoop out servings (enjoying the toasted edges!), and serve warm.
Notes
Cast Iron Care: Don't worry about the lemon juice; a well-seasoned cast-iron skillet handles citrus just fine during cooking. Give it a quick wash and dry afterwards!
