Method
- Place the cast iron skillet over medium-high heat. Cook the ground beef and diced onions until the meat is browned. Drain excess fat.
- Add the minced garlic and cook for 1 minute. Stir in the marinara sauce and simmer for 5 minutes.
- In a separate bowl, mix the ricotta, egg, 1/2 cup of mozzarella, Parmesan, Italian seasoning, salt, and pepper until smooth.
- Scoop out two-thirds of the meat sauce from the skillet and set aside, leaving a thin layer on the bottom. Remove skillet from heat.
- Break noodles to fit the skillet and place a layer over the bottom sauce.
- Spread half of the ricotta mixture over the noodles, then top with half of the reserved meat sauce.
- Repeat the layers: noodles, remaining ricotta, remaining meat sauce.
- Preheat oven to 375°F (190°C). Top the lasagna evenly with the remaining 1.5 cups of mozzarella cheese.
- Cover the skillet tightly with foil (spray the underside with non-stick spray) and bake for 30 minutes.
- Remove foil and bake for another 10-15 minutes until the cheese is golden and bubbling.
- Let the lasagna rest for 15-20 minutes before slicing and serving.
Notes
Skillet Care: Wash the cast iron skillet relatively soon after dinner to prevent the acidic tomato sauce from sitting on the metal overnight. Dry thoroughly and rub with a light coat of oil.
